This initiative seeks to build on the momentum of the first International Gastronomic Congress ENCLAVE, held in 2025, which gathered over 50 Michelin stars and established Granada as a culinary hub. As a biennial event, 'Cocinando ENCLAVE 2026' aims to keep the community engaged, foster experience exchange, and focus on Granada's products and territory.
Deputy of European Funds, Antonio Díaz, highlighted that the program is designed to connect those who cook, produce, and innovate, emphasizing origin as Granada's key differentiator. The goal is to sustain high-level cuisine and begin preparations for the 2027 congress.
The event will feature 'Unexpected Conversations EN_CLAVE', a diverse panel discussion addressing perspectives on territory, products, and current sector challenges. It will also include a forum for the hospitality industry and an inspirational talk by chef Periko Ortega (ReComiendo restaurant) on the sector's transformation.

The event will culminate with 'Granada in 7 Senses' starting at 2 PM, an immersive experience exploring the province's agri-food diversity through gastronomy, music, audiovisuals, and live performances.
This sensory journey, led by tenor José Manuel Zapata, will traverse the province's seven territories: Granada and La Vega, Poniente Granadino, Costa Tropical, Sierra Nevada, Alpujarra and Valle de Lecrín, Montes Orientales, and Geopark of Granada. Each region will be presented with its unique landscape, culture, and culinary identity.
The organization has implemented specific access protocols to maintain the immersive nature of the event, closing doors once it begins to ensure the atmosphere and smooth operation.
Through this event, the Provincial Council of Granada strengthens the ties among professionals, producers, and businesses within the provincial gastronomic ecosystem, paving the way for the second edition of the international ENCLAVE congress in 2027.
