With the arrival of summer and the almadraba season, Toro Tapas Puerto de Santa María joins the celebration of red tuna with special gastronomic days. The initiative aims to highlight the versatility and quality of this highly prized fish on the Cadiz coast.
The experience began with a ronqueo, a live dissection performed by professionals that allows diners to learn about the different parts and properties of red tuna. This event seeks to educate patrons on the complete utilization of the fish.
The tasting menu, available until June 21, offers a variety of cuts and culinary techniques. For 48 euros per person, diners can enjoy dishes such as pickled red tuna on crispy bread with roasted peppers, a tartare with cured yolk and a hint of Jerez, and a tuna encebollado, a reinterpretation of a traditional southern stew.
As a creative finale, the menu includes a surprising watermelon 'red tuna,' a refreshing proposal that plays with aesthetics and flavor. The experience can be complemented with an optional wine pairing for 14 euros.
