The town of Tarifa in Cadiz hosts a unique culinary event: the African Tuna Route. This initiative, held alongside the Tarifa-Tangier African Film Festival, transforms the city into a gastronomic destination exploring the fusion between the Strait and Africa through almadraba red tuna.
The event has become a major attraction on the Cadiz coast during spring, showcasing culinary creations that blend Tarifa's tradition with innovation. Participating restaurants reinterpret red tuna using flavors, techniques, and spices inspired by the African continent.
Among the most notable creations is CasaTarifa's “Moruno Tarifeño,” a tuna skewer with Moroccan dressing and Senegalese yogurt. Boccabuena offers “Perla entre dos Mares,” a combination of red tuna with piparra and Moroccan black olives. Ándale presents “Alma Roja,” a red tuna tartar on a crispy rice wafer.
Creativity extends to other offerings such as Canalla's “Summer Tuna,” mixing watermelon and red tuna, and Un Lugar's tartar with combawa. La Galería surprises with “Argán y oro,” fusing couscous and argan oil with red tuna. Merkado 27 features “Zulu Rojo,” tuna marinated in African seeds wrapped in nori seaweed.
Other establishments like Spirit of Kanaloa (“Taco Karibu”), El Faro (“Pinchito Bereber”), and La Cervecería (“Tunafrica”) complete the route with their red tuna interpretations, incorporating ingredients like coconut milk and yuca to evoke African nuances.
