With over three decades of history, this infrastructure serves as an environment where practical student training and research projects converge. The facility allows for the simulation of agri-food industry dynamics on a small scale, ranging from the production of meat and dairy products to advanced preservation techniques.
The center is currently undergoing a modernization process to optimize its layout, aiming for a more open design that facilitates workflow between equipment. Key equipment includes a high-pressure hyperbaric chamber, acquired with Feder funds, which extends the shelf life of food without compromising its nutritional or sensory properties.
Beyond its academic role, the plant provides services to third parties, enabling small companies in the sector to conduct trials and quality tests. To this end, it features a tasting room equipped to ISO standards and instrumental analysis tools, such as texturometers, which ensure objective product evaluation.
