In the heart of Aguilar de la Frontera, in the shadow of its imposing castle, lies a winery that has successfully merged winemaking tradition with a rich historical heritage. Toro Albalá, an emblematic firm of the D.O.P. Montilla-Moriles, is a clear example of how wine can reflect time and culture.
The origins of this family venture date back over 150 years, when it began in a modest mill known as La Noria. In this setting, wine was crafted with an artisanal touch, laying the foundations for what is now one of the most renowned wineries worldwide.
A crucial milestone arrived in 1922, when José María Toro Albalá, after several generations dedicated to the business, acquired and restored the town's old power station. His vision was to transform this space into the winery's main headquarters, an ideal place for the aging and preservation of exceptional wines. Currently, these facilities, spanning over 14,000 square meters, house the foundational solera, a tasting room with one of the most complete oenological libraries in the country, the unique aerial cellar, and a wine and archaeology museum.
The winery also has facilities in Moriles, where the aging cellars for old vintage wines, fino wine, and traditional vinegar are located, with over 1,000 barrels where the vinegar ages naturally.
In the 1960s, under the direction of Antonio Sánchez, the winery took an innovative step by adopting the vintage system. This decision led to the creation of wines with a distinctive and easily identifiable personality, solidifying Bodegas Toro Albalá as one of the 100 Spanish Golden Wineries, present on the tables of the most discerning palates worldwide.
The D.O.P. Montilla-Moriles, to which Toro Albalá belongs, is distinguished by the cultivation of the Pedro Ximénez grape, a variety that adapts perfectly to the local climate, resisting scarce rainfall and high summer temperatures.
One of its most emblematic products is Eléctrico Bombilla, a fino that pays homage to the winery's origins. This classic wine, dating back to 1922, is presented in an iconic lightbulb-shaped bottle, alluding to the jokes of the time about the "electricity" of their wine. It is a fino made from 100% Pedro Ximénez grapes, with biological aging under a veil of flor and a criaderas and solera system for five years, naturally achieving its alcoholic strength. It is ideal for pairing with tapas, seafood, fish, Iberian cured meats, and cheeses.
