The Rincón de la Victoria City Council presented this recognition to Taberna Chiripa for its commitment to disseminating this local product. The ceremony took place during the Victorian Anchovy Gala, held on April 13 at the Hyatt Regency Hesperia Hotel in Madrid, attended by the establishment's owners, Manuel Figueroa and Roberto Fuentes.
Taberna Chiripa is part of the Victorian Anchovy Restaurant Network, an initiative promoted by the local council to bring together establishments that value and promote this fish. Its inclusion in this network is due to its history of defending traditional cuisine and its contemporary approach to local gastronomy. Currently, four restaurants in the Spanish capital are part of this network.
Within the framework of the VIII edition of the Victorian Anchovy Recipe Book, presented during the gala, Taberna Chiripa contributes with the dish «boquerón y cítricos» (anchovy and citrus). This culinary proposal stands out for its technical precision and sensitivity, aiming to enhance the flavor and texture of the anchovy from a modern perspective, reflecting honest cuisine balanced between tradition and creativity.
