The restaurants Garnata and Asador Contrapunto will host this event, organized by Eurostars Hotel Company, which aims to highlight the versatility and richness of red tuna through innovative gastronomic proposals.
Both venues have designed exclusive menus that explore the different cuts, textures, and nuances of tuna, combining contemporary preparations with carefully selected wine pairings. This initiative offers two complementary interpretations of such a valued product in gastronomy.
At Restaurante Garnata, located in the Áurea Washington Irving hotel, the menu offers a journey through the diversity of red tuna. It includes dishes such as seared morrillo with soy sauce, bao bun with belly, and black loin tartare. The experience culminates with a Roteña-style tarantelo and grilled parpatana, finishing with desserts like lemon and point and a Lemon Pie cocktail.
Meanwhile, Asador Contrapunto, at the Eurostars Gran Vía, presents a more intense vision of the product. Its offerings feature preparations such as cured egg yolk with avocado gazpacho and belly, tarantelo tartare with grilled tuna bone marrow and fried quail egg, and grilled belly with tomato compote. The menu concludes with a mint and dark chocolate semifreddo, and a mandarin sorbet.
