The city of Cordoba is experiencing its grand month, May, and the pastry world is no exception to this celebration. Two renowned pastry shops have decided to pay homage to Cordoban traditions through their sweet creations.
At Ana Ruz Pastelería, located at Alfonso XIII, 22, the pastry chef has shaped the rose and the sunflower, spring symbols closely linked to the Cordoban May, the Crosses, the Battle of Flowers, and the Patios. The rose is composed of dacquoise, toasted hazelnut cream, strawberry coulis, and a light yogurt mousse. The sunflower, meanwhile, is a caramel mousse with a lime interior on a lime sponge cake tartlet with a salted sunflower seed cream.
Furthermore, as a nod to the Cordoba Fair, the 'Cordoban hat' has been created, a key element in the city's history and art, inspired even by artists like Julio Romero de Torres. This sweet is made of dark chocolate with a creamy interior of toasted hazelnut praline on a crunchy black sesame base.
Meanwhile, in the Santa Rosa neighborhood, specifically at Don López de los Ríos, 62, the pastry shop Tu Momento Más Dulce, known for its designer cakes, has transformed its display window into an authentic Cordoban patio. Its founder, María Del Pino, has created a special cake where the pot is made of white chocolate and the interior varies daily, potentially featuring chocolate, pistachio, and white chocolate sponge cake. The flower used is edible.
