The Cofradía y Hermandad de Costaleros de Nuestra Señora de los Dolores, in collaboration with the Porcuna City Council, has organized this gathering at the side of the Iglesia de Jesús. Attendees will be able to taste violetes, a fried empanadilla filled with meat, in addition to enjoying a permanent bar with food and drinks.
The celebration will also include raffles and a performance by DJ Javi Merino. The festival aims to highlight this characteristic dish of local gastronomy.
The violete recipe
For those who wish to prepare this specialty at home, the ingredients for four people are detailed: 600g of minced pork, 130g of Serrano ham, 16 wrappers, 5 or 6 eggs, milk, breadcrumbs, extra virgin olive oil, salt, 2 or 3 garlic cloves, ground cumin, nutmeg, black pepper, and parsley.
The preparation involves sautéing the meat with garlic, ham, and spices, mixing it with egg and optionally parsley. The wrappers are moistened in milk, filled, folded, and fried in abundant extra virgin olive oil until golden brown. It is recommended to drain them and serve them hot.
