The restaurant Arte de Cozina, located in the heart of Antequera, has been recognized with the Top Tradition 2026 award for its dedication to recovering and updating traditional Malagueño cuisine.

Chef Charo Carmona has been honored with the Top Tradition 2026 award in its second edition, which celebrates establishments that preserve and update Spain's gastronomic legacy. The award recognizes Arte de Cozina, a restaurant in Antequera, for its commitment to traditional cuisine and its place in contemporary culinary offerings.
Arte de Cozina, an Andalusian inn dating back to the 17th century, offers a culinary journey through dishes rescued from traditional Malagueño cuisine in its covered patio dining area. Owner and chef Charo Carmona aims to reinterpret and prepare ancient recipes from the Antequera region, serving dishes that reflect the historical influences of Arab, Jewish, and Christian cultures. Featured dishes include ajo berenjena, pelona de lomo, almojábanas andalusíes, maimones, chivo a la pastoril, and olla de castañas.

"It was necessary to have a recognition like this, which would highlight product-based and memory-based gastronomy. Traditional restaurants are part of our cultural heritage and continue to be responsible for some of the most brilliant moments in Spanish cuisine both within and outside our borders."

The Top Tradition awards, promoted by businessman Javier Sáenz, aim to champion temples of traditional Spanish cuisine amidst the rise of innovation and avant-garde trends. The selection of honorees was made by a Committee of Experts comprising leading figures in the Spanish gastronomic scene, including journalists, critics, and institutional representatives.
Other establishments recognized in this edition include Nou Manolín (Alicante), Ca l’Isidre (Barcelona), Doña Filo (Colmenar del Arroyo, Madrid), La Hermandad de Pescadores (Hondarribia, Gipuzkoa), and Hispania (London), the latter honored as an ambassador of Spanish cuisine abroad. Additionally, the historic chef Hilario Arbelaitz received the special “Clásico y Eterno” award for his career.
